The perks are listed on Celebrity's website. The larger suites (especially Penthouse and Royal) often receive extra perks - but those vary and are not guaranteed. Sky Suites do not generally receive any significant extra perks different than those detailed on Celebrity's website. The biggest perks are butler service, complimentary espresso based coffee beverages delivered complimentary to your stateroom, and a free dinner or two in a specialty restaurant if you are on S-Class (if on M-Class or Century you often, but not always, receive an invite for a free specialty dinner the first night of the cruise).

According to Celebrity's website, this is what they show as included on a sky suite. (I picked an M-class ship, the Summit, however from what I've seen the SS amentities are the same class wide). There has obviously been a lot of discussion lately on what is or isn't included, but this is straight from the site....FWIW.:)

Since we like the extra space we have booked sky suites on all but one of our Celebrity cruises. Our experience on M-class ships and the Century has been that half the time we have been offered a special deal at the specialty restaurant on embarkation evening. The special offer is a $5.00 per person extra charge instead of the $40.00 normal charge.
