Early Saver--Booking as Single Person

So, we purchased the Today Show Early Saver packages in December. Have not yet reached travel agent. Just have a question, we purchased the ES package for 5 couples. One of us just lost her husband unexpectedly. We want to book for March 2013. I understand that once we book, she can't change the name of her companion. Right now, she simply doesn't know who will be traveling with her (kid or friend). The package is for two people. Can we just book her name and add second name later or does she have to submit the second name now? She is pretty overwhelmed right now and we want to go ahead and book without adding to her distress.

 

PS. She is leaving in 2 weeks on another Carnival cruise and indicated because it was so unexpected, they would allow her to change the name and have another person travel in his place. However, they haven't finalized this change yet. Any help is most appreciated.
