Buying from 3rd Party tour company

We were planning on Mr Sanchos on our upcoming cruise but just read that it and Nachi are both booked (5 ships in port with us!).... So I got online and found that a third party firm called Beach Tours had reservations available for Mr Sanchos. It was only a $5pp deposit, so I did it, and I printed the reservation. It says to pay the balance to Mr Sanchos when we arrive. Is this good??? Scares me a little bit but I had read so much about just waiting until we get to port to go to any of the beach breaks, rather than booking in advance, in case of bad weather. And everyone seemed to be in agreement that they don't really sell out first thing in the morning, when we'd be arriving.

I freaked out when DH told me that it was sold out, then I found this reservation? Any ideas?
