Have you had rougher seas in the Eastern or the Western? I know it depends on the weather, but do you have a preference because of the swells? As you said, it depends on the weather, but the Eastern does put you in the Atlantic which is historically rougher than the Caribbean Sea. Just check the boards to see how often ships are unable to tender into Grand Cayman! When we went on the tenders the waves were larger then normal but it is probably because there was some raining during the day.
