How full is my cruise?

Not with any degree of certainty.

You have to assume that the ship will sail "full"...all cabins booked...but not necessarily to "max" (counting #3 and #4 in cabins)

NCL will do what it needs to to sell out all cabins on every sailing.

Is there anyway to find out how many people have booked on my cruise? This is simply for my own curiosity.

You can pretty much assume all cruises sail full. Although many of the cabins that advertise they can accommodate 3 or 4 persons may have less than that number, the ship will still have a total passenger count very close to the maximum permitted. As mentioned, if not sold out as cruise approaches, fares will be discounted to fill.
