Formal Nights on Caribbean Princess

We will be sailing the Eastern Caribbean itinerary on the Caribbean Princess in September. I would like to book a balcony dinner for my husband and myself, but would rather not do it on one of the formal evenings. Could someone tell me which evenings are formal?
