Adventure in Belize

I have been to Belize several times and have done the usual excursions. This time my bf and I want to do something that is more adventurous. Once years ago we spent a whole day with a rancher from Wyoming who took us up the Banana river to his hiacenda and we went horse back riding in the jungles, had lunch cooked for us and visited with his local staff. Best excursion ever. Now I want to do a smaller tour and hike, swim, boat on the river, meet the locals, or something that is an awesome insider experience. Ideas?
