Clothing for Hawaii to Sydney in November?

We are going on a bucket list cruise this fall from Honolulu to Tahiti, Moorea, Bora Bora, Fiji ending in Sydney. I currently live in Panama, so will have long flights on both ends of the trip. We have a week pre cruise in Honolulu, 19 days on the Millenium, and 5 days in Sydney. I have no idea what to pack! how formal will the three formal nights be in the South Pacific? What temperatures should I anticipate? I know luggage weight will be a concern, so I want to be reasonable without limiting myself to black and white coordinates like I did for transatlantic cruises. Any suggestions from those who have been to Polynesia?
