Are there any issues with those rooms with noise from the theater?

I don't see it being a problem if there is unless it is really really loud but just want to be prepared.

Last show every night starts at 9:30 pm so should be done by 10:30. After that, no problem.

And if you look at the deck plans 8007 is over backstage that is the quietest part of Stardust. I think any noise issue would be further aft over the speakers in the theater.
