You can check the disneyland website for the hours of the particular day that you are there. You could arrange for a cab or a rental car pickup at the port, also on your own. It is not that far to Anaheim, but traffic can sometimes be difficult, so allow 45 minutes to an hour to get over there. The big summer rush is about over now, but it is still a busy place and you will have lines to wait in for the rides, it is a fun day , but a very full day . We live not far from the Magic Kingdom and when we go it is a Loooooog don't get home till near midnight day for us. So I hope you can still enjoy your time there even if it is somewhat short. Please allow yourself enough time to get back to the port , our freeways here can get really bad bumper to bumper traffic, and I wouldn't want to see you miss the ship. Enjoy your time in So. Cal. After looking at costs and time, DH decided his day at Disneyland would have to wait, and he caved to doing a bus tour instead. If you like Vietnamese food you can go to Garden Grove for lunch then Costa Mesa shopping mall. If you love Chinese food then you have to visit Monterrey Park.
