Ship time vs local times

We are going on Carnival Paradise. We will be in Grand Caymen from 8am to 3pm We are trying to book a private stingray tour with Captain Marvin

They said the 10am to 1pm tour would not work for us. They said our last tender is at 1:15pm So they gave us the 8:30 am tour. I thought the cruise ship changed the time to go with the local time in what ever port they are in. I have been on ships that do this. I am so confused about this.

So if we dock at 8am and my tour is at 8:30 what time do I get in line to get on the tender?
