vegetarian food on Celebrity (Constellation)

Last time I sailed with Celebrity was two and a half years ago. I found the use of obviously frozen veggies in dishes off the vegetarian menu disappointing. Has anyone cruised more recently on this or another Celebrity ship who can speak to the quality of the vegetarian options these days? Does anyone have copies of the vegetarian menus available to share? Also, is it possible to get something made in the specialty restaurant or casual dining alternative that is vegetarian? I'm not a big fan of goat cheese, and that is one of the only veggie options I recall from the Olympic on Millie. Thanks in advance!
