Also, please give your thoughts on pre-booking one of the Specialty Restaurant packages (like 3 or 5 dinners, etc.?) Good to do this or just wing it and book reservations once on board rather than lock ourselves into fixed restaurants? And do you recommend booking dinner reservations now or just wait til actually on the ship?

Why would you want to book a 5 meal Specialty package when staying in Aqua? Blu is usually excellent. At most, I would do the 3. If you are flexible, you should be able to get a good deal if you waited to book onboard. However, you may not get the times or days that you desire. That is the risk that you take.
