I can try and answer your question, we have been many times and stay for a week, at the grocery stores we pay in US and the change is guilders. By the waterfront there are vendors selling many things, they gave change back in US. A lot of restaurants will give back guilders also. I guess you could ask for change back in US.

Also, when paying in supermarkets, restaurants, etc - it's perfectly safe to use your debit cards so you don't have to carry lots of cash with you.

As long as it has the Maestro/Cirrus logo on the card, you're good to go.

Thanks Isa65. If I am Canadian would those debit cards be accepted. All it has is the Visa, Interac logo. If not then what do I do with the guilders change? Can I exchange before I go on the ship?

If it has a VISA logo they might accept it. Otherwise bring small bills ($1, $5 and $10) so you won't receive much back in guilders. You can try to get dollars for your guilders at Guest Services on board. Some cruiseline do this.
