Realistic time to schedule excursion

We will be arriving to Grand Cayman on March 11, 9:00-4:30. When booking Captain Marvin's the rep said that the Victory will be on EST which is one hour ahead of GC. So, we booked the 10:00 a.m. 3 stop snorkel. When checking current times in GC and EST today it appears that we are on the same time until Daylight Savings time. So...is a 10:00 excursion unrealistic? We can do the 11:30 excursion if we need to. Thank you for your help, Cherie
