Can anyone suggest reliable and safe alternatives to booking excursions through NCL?

We are looking into snorkeling and spending time on the beach.

Which ports are best for what activities?

I've been looking into the same thing. There is a lot of information in the Ports of Call forums. You might do a little research there to get started.
