Depending on where you are heading for you may see some coast, but not very close to the ship. There are established sealanes that ships have to follow. Lots of gas and oil rigs to see though.

Sail on one of the smaller ships and you may transit the Kiel Canal, that we found most enjoyable. Sailing between Copenhagen and Sweden you will certainly see a fair bit of the coast.

The Baltic is most definitely the most enjoyable cruise that we have ever taken but there again we haven't tried Norway yet.
