When sailing North, between mainland Europe and the UK, does the route tend to hug a coastline, or will it be just sea view?

Depending on where you are heading for you may see some coast, but not very close to the ship. There are established sealanes that ships have to follow. Lots of gas and oil rigs to see though.

Sea view. Ships don't hug coastlines, they get out to sea and go in a straight line. Depending on the shipping lane rules, you may well come into sight of land occasionally.

Sail on one of the smaller ships and you may transit the Kiel Canal, that we found most enjoyable. Sailing between Copenhagen and Sweden you will certainly see a fair bit of the coast.

The Baltic is most definitely the most enjoyable cruise that we have ever taken but there again we haven't tried Norway yet.

Given the choice they will avoid the land because they want to open the casino which earns revenue ;)
