another newbie, Q about dining and entertainment

We are going on our first Oceania cruise in October (Adriatic).

We are accustomed to late seating on Celebrity, and enjoy the main theater shows.

What time does evening entertainment usually start, and how much time should we allow for dinner (GDR or specialty)?

The shows on Oceania, generally speaking, are not up to par with most of the other cruise lines. They are fine, IMO, but don't expect any extravaganzas. Oceania is known for many things but not for their shows (or shore excursions).

They start at 9:30 or 9:45 - one show only. Most dinners will last 2 hours+ - longer if you have a large and talkative table; faster for dinner for 2.

I suspect you will enjoy your cruise and may have trouble returning to Celebrity :D
