Formal nights on 7-night cruise

As a general rule, if it is a 7-night cruise with 2 sea days, would the formal nights be on the sea days? Wanting to do UBD on one of the formal nights. I called to book the UBD but they said they need to know what day.

Usually the 1st formal night is the 1st night after embarkation. The second formal night will be the second to last night of the cruise.

You can pay for the UBD ahead of time but you can't book until you are onboard.

At least thats the way it has been.

That's what I thought, but when I called to book it, she said I needed to pick a date. I'm wondering if I waited to book it once on board it would still be available. Also, I wanted to use OBC but cant do that in advance. I just dont want it to be booked up by the time I board, as they only do so many per cruise.
