We had our sailaway party on the verandah and also during the first sea day. Really enjoyed that cabin. On our sailings from Seattle, it takes a couple of hours after sailaway to actually reach the open Pacific, so you should have time for an early dinner on the verandah. I'm not sure I'd plan anything late (after 8:00) as you most likely would be in the open ocean by then, and it can be windy and rough....or not!.
