Build my own excursion

Ok so here's the run down. I don't care about all the tourist attractions. I like to venture on my own. I like breweries, distilleries, great place to eat and a nice beach to relax at. What places could I combined to make my own "excursion"?

Beach - 7 Mile Beach is just gorgeous!!! Clean and calm waters, you will enjoy!!

 

Rum Distillery - Seven Fathoms or Tortuga. Tortuga is the tourist rum spot...Seven Fathoms is a bit more interesting, look them up under Cayman Spirits Co.

 

Dinner - Ortanique (i think thats the spelling), next i would look at Sunshine Grill (looks like a place you wouldn't get good food, but its super good!), next try a place called Michael's )i didn't get to try this one, but heard such good things)
