One of the desserts I tried was a low-calorie lemon cake with a creamy filling between the layers. The menu offered the same type of cake the following night, only it was coconut. I don't have 'their' recipe, but after seeing your post sitting here all alone for a coupla days, I decided to share my special LITE cake dessert::) Buy the lite cake mixes in lemon or coconut. I bake them in three layers, rather than two. When done, use sugar-free pudding in lemon or coconut (I use 1% milk) as the filling between layers.
