Typical hours for embarkation day are 11 - 9 with closing during the Muster Drill. But as for how much they know about the ports? Well, that varies enormously. If you are on a cruise where previously the ship has visited that port, you will find that they might have gotten some feedback and will know more about specific shore excursions. But if it's the first time in that port that season, they might not know anything more than the written description you can read for yourself.
