GSC Paddle board excursion

Some of the family want to take the excursion but like last cruise, minds get changed as we get there and would rather do something else. Can we sign up when (and if) we get to GSC or will we be taking a chance that there will be none available when we get there?

It's not really an excursion. You just rent the board and go. There is no guide or instructor. There are a lot of boards and people rarely rent them so you should have no problem renting them on the spot.
