There was originally a conflict with Caribbean Princess but it moved to Bayonne. I think you will like Southampton. I was last there overnight recently, August 26 for the transatlantic QM2 sailing on August 27. If you are staying on to Hamburg I think you will really enjoy that city. I do and will post more information about it later. I was in Hamburg twice this year on rail trips and sailed out of there on the QM2 last year. If you are on the back to back you can have a good day before the evening sailout. It is a good sailaway from Hamburg along the Elbe River out to the North Sea. The ship departure times vary slightly since it has to sail out at high tide due to the depth of the river. From the dock in Hamburg it is 130km or 81 miles out to the North Sea. It seemed like much of the night was spent slowly getting out to the North Sea. Germans are fond of the QM2. Many of them make a picnic or party along the river and wave as the QM2 sails out even into the dark evening.
