How to get from pier to Stuarts Cove for snuba?

I would call Stuart Cove and talk to them directly. They have arranged pick up locations but because their facility is on the other side of the island, I'm not sure you'll be able to get to the pick up spot in time. It looks like their SNUBA tour is at 9 AM and your ship doesn't get into port until 8.

This is why not many cruisers use Stuart Cove - their tour times just don't work with most ship times.

Sorry to hear that, although I was afraid that would be the case. :(

Since your husband and son sound like they want some adventure, how about the Segway tour? I haven't done that particular tour but we did a similar tour in Nassau several years ago and it was so much fun. Check on Trip Advisor for reviews.

Or maybe a trip to Blue Lagoon for a beach day or dolphin encounter?

You have a pretty good amount in Nassau so at least you have lots of options.
