Most of the beach clubs are lined up along the same side of the island, so the water and sand quality will be very similar. The difference is in the facilities and business model. Some are strictly all-inclusive (food/drink) for about $50+ per person. Some cater more to families.

 

For a few hours at a nice beach with great facilities and good food/drinks/service I suggest Paradise Beach. Plus you get to enjoy the HUGE pool. :D $3 admission/chair rental and they ask that you spend $10 each on food/drinks - one drink and some nachos will do it. Taxi with up to 4 passengers will cost about $17 each way - so pair up with others on your roll call and save $$.

 

Another option is The Money Bar - great snorkeling from the shore, but no real beach (you enter the water via steps). They do offer a sandy area with chairs for sunning/relaxing, nice views, great facilities, plus good food/drinks/service and no admission fee. Taxi will be about $10 each way.

There are 3 cruise ship piers on Coz - be sure you remember which one your ship is at (it can get difficult after 8-9 margaritas :o); we love to watch pier runners trying to catch the ship! :D

We were in Cozumel in Dec and Jan . The sea grass [sargasso] along the islands natural beaches was very thick. You'd be better off at a resort for the day. They were keeping the beaches clean but there was still debris in the water. Here's a pic from earlier in the year.
