When booking dinner reservations 90 days out.

I believe you pay right then and there with your credit card for the flat fee restaurants.

 

But for the a la carte ones, like Le Bistro, you don't pay anything. I'm convinced this is why there are so many empty tables at Le Bistro. Because people make the reservation, don't pay anything upfront, decide not to show and don't bother to cancel.
