Conquest late dining-any cons?

We are having late night dining on 12-4. I read that alot of activities are between 8-10. Will be be missing much? Also what are the hours of Sur Mer, Deli, Sushi (or is that Sur Mer?), Chinese Wok, etc?

We always get late dining, because we like to stay on Lido deck until about 6pm partying. On all 6 previous carnival cruises, when you had the 8pm or 8:15pm dining, you went to the show at 10pm. Now, to me, that kinda messed things up with the show at 10pm. Now, if you have late seating, you have your show at 7pm. So, you have your evening free after dinner to do whatever.
