Yes absolutely. You can even have the older kids use their own or you and DH, use different cards.

Great, thanks! The last time we cruised, my oldest was 17, so they had charging privileges, but were given a limit. My 2 oldest will be given permission for beer and wine, but not on my tab. They are poor college students, which should slow down the drinking considerably.

When you check in at the pier have them each give their own credit card. We do it all the time.
