We've always found the food and service to be better than Carnival (not leaps and bounds, but somewhat better). Otherwise, it is pretty similar.

I would recommend that you start with the Frequently Asked Questions on the NCL website. Lots of good information about money issues, dress code, what you can and can't bring on board, etc. Secondly take some time to read through this forum. By then you should have more specific questions that everyone will be helpful in answering.
