daylight savings

Not sure about New Caledonia.

But when we sailed to New Zealand, they adjusted the time during the night.

So we left on Sydney Time (non daylight savings) and the second night I think we lost and hour (they put the clocks forward) and the third night (they put the clocks forward) so when we got to NZ we were on NZ time.

That's right Dan, if the ship leaves Sydney in the Daylight savings months (Oct-Mar) then the time is the same. If you leave in July as we did then they set the clock forward on the first night and back on the last.

 

Ships leaving Brisbane will need to change the time as they don't follow DST.

That's correct. Sailing out of Brisbane to New Caledonia during at any time of year, clocks go forward one hour on the first night of the cruise, and back one hour on the last night.
