This was great....Do they change much cruise by cruise? Also is there a way to see the daily dinner specials so we can plan where we want to eat each night?

I doubt they change at all though won't bet money on it. What do you mean daily dinner special. Do you mean the menus?? These would be a tough call as they rotate the menus every few weeks in the MDR. Here is a URL that should give you an idea of what's expected though these menus are not current ( i understand no lobster with the surf and turf). They list the menus for the week somewhere on the ship (i forgot where but somewhere close to the kitchen). I recommend attending the role call and asking the chef himself.
