It's usually 5:00 to 8:30, but I've read on some ships/sailings it was 4:30 to 8:00. Either way, 3 1/2 hours.

Depends if first sitting is 5:30 or 6pm

I was just on the Anthem last month. The diamond club drink hours are from 5:00 to 8:30. The vouchers are good for the same times.
