Had spent 2 weeks cruising in that area in July when it was super hot, but visited Sibenik (Croatia) in the October on a one week cruise. Weather was very different and it actually poured with rain that day, so heavy we had to wait until almost lunchtime to leave the ship. It was also the end of the season so quieter than it will be for your visit. Found almost nothing on CC so took our info from Tripadvisor Sibenik and the official tourist info site which is actually very good and details what there is to see and do there. You can also print off a map of the town. http://www.sibenik-tourism.hr/en/ There are also other websites if you internet search for "Sibenik". Whether or not you print off, on the map you will see in the far right a little ship symbol. That is where we docked. Nice views of all the fortresses from there and only a few minutes walk on level ground to the old town. The Tourist Office is close to there in front of the old town. We climbed up to one of the forts, found the lovely little mediterranean garden at the monastery, looked at all the heads/faces on the Cathedral walls, admired the Loggia, meandered through the old town and walked some of the waterfront. it was all we had time for as we had lost most of the morning due to the weather. I imagine in decent weather it is an attractive town and easy to spend a day there. There were shorex on offer to national parks and/or waterfalls, I cannot remember which, and to Split, but unless there is a shorex which really appeals to you Siibenik has quite a bit to offer. The fort has been converted into an entertainment venue, with a big stage so other than the views, not particularly interesting. The Mediterranean Garden was lovely and has gelatos for sale. The interior of the Saint James Cathedral was pretty impressive, but not grandious. If you want a true local experience, however, contact vina-rak@hotmail.com. Theirs is a local vinery and the owner will pick you up in downtown Sibenik. You could have lunch at the site, and sample their wines.
