On Carnival we noticed that the buffet usually had a similar menu every night that the MDR had. Is this true with RCI? Specifically we'll be on Adventure this fall.

yes and no. there will be a couple of items from the MDR menu available , but not all.

We've found that a few of the soups, appetizers, and entrees are usually on offer in the WJ each night. On Freedom last December they also had a theme night each evening that weren't usually too bad. Also a rotating cooking station each evening with things like made-to-order pasta one night and crepes the next. We almost enjoy it more than the MDR anymore to some extent because we like the casual nature of it and the food quality is pretty good at dinner.
