What do you do for lunch on Falls excursions?

My husband is a Diabetic, so we have to plan his eating carefully. Since both the Dunns River Falls and Mayfield Falls excursions are so long, what do you do about eating around lunchtime? He doesn't have to have a big meal, but he will have to have something to eat plus snacks with him in case his sugar goes low. Any thoughts on this would be appreciated. This will be our first excursion on a cruise.

I book and excursion w/Peat Taylor. After the falls, and a drive thru FernGully, they offered to either take us to a local restaurant, or back to the ship for lunch. We went to the ship for an hour and then he picked us back up for a shopping tour.
