which do you recommend and why? There will be three of us in Mid-May. We would like a place where we can rent chairs, buy food and drinks and also snorkel. I’ve read you may need water shoes for Sapphire but also heard that Coki may not be the safest. Which would you choose?

You do not need water shoes for Sapphire. Both beaches offer all you are looking for Coki has more fish and Sapphire a better view. You should be happy at either.
