I am on the Paradise Nov 5 and got a upsale offer 640 to go from a 3 person OV on Upper deck to a Suite on Verandah deck for 540, and we took it, now I am in V19 on the Paradise, besides Priority Boarding, and debarking, what else do I get with the Suite?

I believe you'll get a couple bottles of water along with priority embarkation and debarkation. And of course you'll have extra space which will be helpful with 3 in your cabin. I don't think the Fantasy class ships have whirlpool tubs in the suite's bathroom. That's basically it. Carnival isn't known for its suite perks. Enjoy your cruise.
