I believe you can do that while filling out your "check in" info in cruise manager on the Carnival site.

You may want to check that it actually changed to new card. I recently did the same thing at a hotel but days later when I checked my statements, the hotel showed up on the original card and not the one I switched to. I should have been more diligent to check for accuracy
