I haven't cruised in several months and when I go to the website to do my check-in and change my preferences for how the bed is arranged, what perks I want, I can't find this any more. Have they taken away these options?

Yes, you have to call to set those preferences now.

Each time they change the website, they remove some functionality.

 

Soon, there will be one button on the website that says "Book me a cruise and charge whatever you like".
