Empress to Cuba April 2019 - MDR Menus and Compass listings?

Hello all. My boyfriend and I are doing the 8 nights to Cuba in April and have My Time Dining. I'd like to reserve dining times in advance, and possibly reserve a dinner for Chops. Is there someplace I can find the menus for the main dinning room to help us decide what night to do Chops? And, is there someplace I can see the Compass/daily newsletter to get an idea of what events will be taking place at what time? Thanks in advance for any guidance that can be provided.

The cruise line does not publish dining room menu schedules nor Compass listings. The only thing you can do is search for some review of the same exact itinerary.
