Can I cancel a dining package once onboard?

My girlfriend and I never eat at specialty restaurant but we were thinking in getting the 3 night diner package for the symphony sailing from Miami.  Our idea is to pick the restaurant that we want and time as soon as we board but in the event the restaurants that we want or time are not available can we just cancel the package even if you are in the ship. In the case we can cancel it do we get our money as OBC or back to our cc? 

 

We want wonderland -chops-and 150 central any time after  8pm or 830pm do you think we might be lucky?
