They booked a 3 night specialty restaurant package last minute and could only confirm 2 for times they want. The third, were given a later time than wanted and told to change time when got on ship. Or, she can make reservations through the ncl while waiting to board and then cancel her existing one. Those are the options I can think of. Have your MIL go to the dining reservations desk when she embarks and make/change reservations as needed. If she does it as soon as she boards, there will be no problems.
