Spa treatments, specialty restaurants..?

I'm taking my mom on our first cruise in April on Jewel of the Seas. If I'd like to surprise her with a dinner at one of the specialty restaurants and a massage/spa treatment, can I book them before we get to the ship....or is all of that done on-board once you get there?

You book them on board. Look for the specialty restaurants when you first get on board and go make your reservations. Then go find the spa people. No big worries tracking them down...they will be everywhere, handing out flyers and trying to get people into the spa tour.
