Why does MSC get such relatively poor ratings?

I will be sailing in November, but I admit the price point for a suite room was what enticed us.  My cruise  was less than $3,000 for my family of four in a suite, I can on!y get a balcny, and that is finding a good price after much research, at that price point on RCCL. It will be a fantastica experience so not the fancy YC, but we don't want that.  We wanted to be in Europe when other lines weren't there and so we thought we would try it.  I'm prepared for dinners to take hours, waters not to be included at dinner, and announcements in many languages.  I've had good and bad food on all cruises so I will find what is good and stick to it.

For me it's more important that MSC offer live music in the Top Sail Lounge every evening

I did enjoy that, to a point.  (Please see my response to BermudaBound2014's post below.

And Cabin stewards Butlers and such like again I dont need to see them just know they have been and are contactable if I need anything, Ive often just left notes for my steward asking or thanking for things. We always converse in the corridor when we see each other.

After having experienced a Butler for my suite, I have to ask why?  Maybe I am a too "low maintenance" guest for such service.  My Filipino Room Stewardess seemed to do the most beneficial work for me.  Jean Mark, my Butler, surely made his services known to me.  But, I required little.  I will admit having a Butler escort me to the Cirque show and get me into the proper seat was good.  (The Butler was not Jean Mark and the Concierge seemed to have to "order" her to do so when I requested it.)  Butler service in the Top Sail Lounge was very good, but nothing better than in the Ocean Bar on a HAL ship.  At the YC Pool Grill, the young man in attendance daily, while not a Butler, could not have been more solicitous without being intrusive.

On our sailing, we had solo violinist a few evenings and a solo pianist on others. The pianist was talented on the ivory, but his voice left much to be desired (for us).

Once, there was a solo female singer with the pianist on my sailing.  Twice, the violinist and pianist played as a duo.  I agree with your review of the gentleman pianist.  Very low key entertainment in the YC Top Sail Lounge, I thought.  I expected better.  And, ventured outside the YC confines and found such.
