Just booked... need excursion advice

I've just booked family trip for parents' 40th anniversary at Christmas... will be in Freeport Dec. 25... pretty limited excursions...

Anyone have suggestions/contacts for something outside Carnival excursion list? I'd like to involve everyone... parents are 60ish, youngest sibling is 15.
