Oct-Dec 2021 cruisers on Liberty OTS

We're on Liberty in January with itinerary changed from Cozumel/Falmouth/Grand Cayman to Costa Maya/Roatan/Belize. I'm interested in what shore excursions everyone is doing.  We've booked independent excursions many times on other cruises, but we're going to stick with the ship excursions this time, mainly due to Covid. I noticed right after the itinerary changed, there were a few RCCL excursions but as of today, it seems like more are being added.  I'm also interested in what activities are on the sea days, as we have three of them.  Thanks!

In costa maya you most go to Bacalar and 7 Colors Lagoon, it is beautiful
