If it's the same as the last time I was on it pre-COVID, they've got at least 6:5 shoe (8D?) with 5+1min, a higher minimum 3:2 shoe, and a Super Fun on CSM whose ruleset escapes me, but had better odds than the 6:5. The BJ has their own variant of Lucky Ladies that's marginally better than at most other places.

Not sure about Emerald specifically, But all the Princess ships I have been on they have:

Standard Blackjack Pays 6 to 5.

You can talk to the Casino mgr about opening a table that pays 3 to 2 if you will agree to 25$ minimum bet.
