First timer, looking to book scuba

I'd like to book a Scuba excursion in Cabo, but there isn't anything available with Norwegian in December. I'm a bit nervous to book outside of the cruise line since this is my first time cruising. Does anyone have any advice? I'm concerned about the timing of getting off the boat in time. Is that usually an issue? I'm not sure what to expect and I didn't realize that we had to book excursions early and it looks like most of the good ones are already booked.
